A refreshing change from tomato salsa. It’s cooler and more refreshing on a hot summer day, I suspect because of the water content of the cucumbers.
Varying the amount of jalapeño, cilantro and cumin makes a huge taste difference so play with it until it’s to your liking.
Here’s the recipe:
Makes 2 cups
1 cucumber, diced
1 small onion, diced
Juice from 1 lime
1 cup cilantro leaves, finely chopped
1 jalapeño, carefully seeded and diced into small pieces
1 teaspoon cumin
1/2 teaspoon salt
Mix all ingredients together. Stir well but gently. Serve cold with good quality chips or any summer dish.
